I think they leave the tails on shrimp because the tails and shell are the city hall of favortown. That said you can deshell before cooking and cook your oil/butter sauce with the shells, remove shells, cook shrimp and pasta in that shell sauce/oil/butter/however you want to do it. Could just make a huge thing of shell butter and then that's just your butter ingredient for a more complex white pasta sauce. You gotta cook with at least the tails if they come de shelled, and that's why restaurants leave them on for flavor, and guess they don't want to take the prep time needed to serve them without the tail, but yes they should.

For onions, don't hold your head directly above them and breathe through your mouth so as to not bring the air around onions closer to your eyes. If you need a knife sharpened and don't have a sharpening tool at the moment, find a ceramic plate and use its unglazed edge on the bottom, ceramic is harder than steel and will sharpen your knife.

Onions release gas when they are cut. All you have to do is just *not* hold your head *directly above* the onion you are cutting. Most everyday onion cutting can be accomplished without watery eyes in this way. 😁 Just in addition to what was said.

For the onion thing I've heard these 2: keep your knife ridiculously sharp because it sprays cause you're "crushing it" spraying the juices, or one thing I've tried and had a bit of success is cover the part of the knife that will come into the most contact with the onion (usually somewhere in the middle) with oil, just be really careful to not get it on the handle or where your hand will be on the knife and ostensibly use a paper towel to put the oil on the knife so it doesn't get on either of your hands.
